Process
Salmon fillets are cured with a sea salt and sugar mix, smoked and conditioned. After conditioning they are then trimmed and sliced, and the slices are placed onto a gold board to weigh roughly 1.5 lb sides. The packs are then vacuum packed and frozen to keep the integrity and nutritional value of the smoked salmon. Each pack is boxed into a case weighing about 18 lbs for distribution to delis and restaurants.

Process
Salmon portions are cured with a mild salt and then only half baked. This is to retain moisture. Portions are individually packed and boxed into 20 lb cases.
Portions are labeled to be further cooked to 165°F. This allows the consumer to heat the product while at the same time finishing cooking the product. And do not overcook the product.
