Each fillet is hand-cured with salt and sugar, then smoked using natural smoke. After resting and conditioning, the skin is removed, and the fillets are hand-trimmed. They are machine-sliced with diamond-tipped blades for easy separation. Highland Farms Ltd takes the extra step of replacing the slices back onto the skin to maintain flavor and texture during shipping. The fillets are placed on a high-quality, waterproof board to retain oils, then vacuum-packed for freshness. Finally, the product is rapidly frozen in specially designed boxes to seal in taste and nutrients for distribution.
